Tis the season for apples! Fall is a major season for apples. However, there are many varieties, and some are in peak season during certain months of the year. Since it is still September, I decided to concentrate on Honeycrisp apples, which are best in the month of September. Honeycrisp apples are really sweet and juicy. They are best for eating and also making juice.

1 medium apple has:
- 80 calories
- 22 grams of Total Carbohydrates (7% DV)
- 5 grams of Fiber (20% DV)
- 16 grams of Sugar
- 8% of your Vitamin C
- 2% of your Vitamin A

And before you ask, no I will not be posting an apple pie recipe. Instead, here is a delicious recipe for a fall apple salad with a maple syrup dressing. Delicious!

I found this recipe on www.grouprecipes.com. I thought it would be different to take a different route with apple cooking. This salad serves 4 people and takes a total of 25 minutes to make:

Ingredients
Dressing:
  • 1/2 c canola oilshopping
  • 1/4 c maple syrup
  • 1/4 c mayonnaise
  • 3 Tbs white wine vinegar
  • 2 tsp sugar
  • salt and pepper to taste
  • Salad:
  • 1 bag(5 oz) mixed baby greens
  • 2 Gala or red delicious apples,cored and chopped
  • 1/2 c dried cranberries
  • 1/2 c chopped walnuts,toasted
To prepare:
To make the  dressing, whisk together all of the ingredients except for the oil. Once those other ingredients are well mixed, gradually whisk in the oil to create a smooth and well-blended dressing. Next place salad mixture ingredients in a bowl and toss. Add dressing (as much or as little as you would like) and toss. Garnish salad with walnuts. Enjoy!
